So, when I started this blog, I really wanted to try to post recipes on a regular basis. So far, that hasn’t happened, at all. Oops. Let’s face it, I don’t cook much, and when I do, there’s little variety because I’m always on the go. In the last few weeks that’s changed a little bit though. Matt and I have been cooking together more often and I recently just made these cookies that are pretty much the bomb. I’ve shared the recipe with a few friends and they all have found them tasty, so why not.
Just to give you an idea of how good these cookies were, I made them 3 times over the course of a week! This recipe is pretty clean, especially if you choose to go that natural/organic route with your ingredients. Using a peanut butter low in sugar or using the natural version will make these cookies even better for you!
All you need to make these are a peanut butter (or try any nut butter of your choice), honey, an egg, and oats.
Feel free to add any other fun ingredients to switch things up like adding chocolate or fruit.
