As I’m going through my own nutrition challenge and meal planning journey recently, I’ve realized the necessity of an easy, grab-n-go breakfast. I’m not normally a breakfast eater so finding something that I could easily fit into my morning with little to no preparation was key. The last thing I want to do is have to change my entire schedule or lose sleep just to make sure I’m getting my breakfast meal in.
As I’m going into week three of this challenge, I’m realizing that these egg muffins that I’ve been making are a simple meal prep for the whole week! I’ll usually pair them with a piece of fruit and my MCT oil in my coffee and ta-da, there’s a full meal.
So while this is a recipe post, I’m just going to give you the basics and how I’ve been making mine, but feel free to do whatever you want. The options are endless.
As of next week I’ll be participating in a fairly strict nutrition challenge. Monday is quickly approaching and I slightly began to panic. The nutrition chick, panicking about a nutrition challenge?! Yeah, it’s a thing.
I started thinking of a few things that I knew would be beneficial to do before the challenge started, and then I got to thinking even more… I’m sure other people would find this helpful too, so now, my solution to my own problem has turned into a blog post!
A few months back I was introduced to a dietitian, Gina B, that is now based out of San Diego, California but received her bachelor of science in dietetics and her master of science in human nutrition from Eastern Michigan University. (That’s my school too! 😀 )
After becoming more familiar with Gina B’s work and seeing some of her content I decided to dive into her book, Mastering Mindfulness.
Here’s a little bit about my initial thoughts on the book.
Last week I shared on social media my cauliflower pizza and a few of you mentioned that you would be interested in learning about the products I used as well as the recipe. I used a frozen cauliflower crust so this is actually really simple… but seriously, I think the fact that they’re now making these frozen cauliflower crusts is UH-MAZING!
The brand that we found at our local Meijer was called Caulipower.
It can get a tad bit annoying when I hear people talk about how they choose not participate in physical activity. There’s a never-ending list of excuses: I don’t need to lose weight, I don’t have time, I don’t want to look muscle-y, or they just don’t think it’s going to benefit them.
Like seriously?! You think you don’t need this in your life?! Well, I’m about to tell you why EVERYONE needs to be physically active.

AND less than a week away from Turkey Day!
I tend to save all of my workouts on OneNote on my phone, makes it REAL easy if I want to be lazy and not come up with something to do either at home or at the gym for the day. Here’s a workout I pulled out from January of this year, put it to use again this Tuesday morning and figured I may as well share it!
This is a Tabata-inspired workout, but rather than the typical 20-second work intervals we’re doing 30 seconds. 🙂 I love high-intensity work. It’s a great metabolism booster, plus this workout only takes about 30 minutes! Get a good sweat to burn off that extra dessert you’re going to have at dinner Thursday! 😉

I recently just got back (and recovered) from my first FNCE! FNCE is the annual Food and Nutrition Conference and Expo hosted by the Academy of Nutrition and Dietetics.
This Friday is super special for me because tomorrow morning I leave for one of my favorite cities! CHICAGO <3

It seems as if excuses are getting easier to come up with and eating healthy, exercising, and taking care of our bodies is becoming more difficult. That’s all simply perception and I think we all need to give ourselves a little reality check now and then.
